CHRISTMAS MENU: HOME MADE VANILLA ICE CREAM AND CHICKEN ALA-KING.

 

 

 

Hello beautiful people, it’s another day in food land and the menu for today is…… drum roll……….  Vanilla Ice cream and Chicken Ala-king. Yum! Yum!

 

I know, a lot of us love ice cream but probably don’t know how to make it. And maybe puzzled on how it is made. well, believe me when I say this, I too have been on this table.

 

 

The day came when my teacher in catering school was to teach for the day, yes, and students who had learned how to make it before my set advised us to pick ice cream as the menu for that day and Boy! I died a little when I found out how easy it was to make an ice cream.

 

 

 

Read and be excited as I was.

 

Recipe: 4 Egg Yolks

Castor Sugar 100 g

Milk 300 ml

Double Cream (Nestle Cream)

2 Teaspoon Vanilla Essence.

 

Method

Pour the milk in a saucepan and heat it to a boiling point. In a bowl, beat the egg yolk and sugar together and then still beating, pour in the boiled milk.

Return the mixture to the pan and stirring constantly heat it until the mixture forms a foam over the back of a wooden spoon.

Do not let it boil or it will separate.

Remove the pan from the heat, leave it until cold, then stir in the cream and vanilla essence.

let me add this for those of us that love to experiment as I do, I used Bailey in my mixture, some chocolates ( various flavors) and I whisked with my whisking machine.

Now, if you have a mixer it could save you the stress of actually whisking the yolk with your hands. it just does the hard work for you and in minutes you have a fluffy mixture.

 

 

I added Bailey because I wanted a touch of alcohol in it and I was serving it to friends so yeah, that’s my reason. It turned out stupendous.

 

 

I cut chunks of chocolate bars in the mix, as well as M&M and by the time it had solidified the ice cream was a beauty made in Nana’s kitchen.

 

 

I was so proud of myself and so grateful I had that opportunity to learn how to make one of my favorite things.

 

If you’re making for a larger number of people. you’ll need to increase the number of eggs, and sugar. But, lets put into consideration not go too crazy with the sugar.

 

 

 

Our health’s important. And based on our little knowledge on Diabetes, playing safe is key.

 

It is safe to say, that everyone loves to chew something, be it chicken, dried meat, peppered snail or cow leg. And, licking a chilled ice cream and nibbling on something makes it worthwhile if you ask me. lol.

 

I talk too much, I know. I’m just excited. so let’s make our Chicken Ala-king.

 

Recipe: Mushroom – 100g

margarine 20g

Cooked Chicken – 400g

Red pimento ( Red fresh pepper)

Cream/ dry cream – 30ml

Sherry

 

Method

Wash, peel and slice the mushroom.

Cook Chicken without coloring.

Cut the Chicken in small pieces.

Discard the seed of raw pimento.

Add the Chicken to the mushroom, add pimento.

Drain off fat and add the sherry.

Finish with cream, correct the seasoning.

Place into the serving dish and decorate with a slice of onion.

 

And, there you have it your very own Chicken Ala-king served with a Baileys Vanilla ice cream.

 

This Christmas, your family, and friends are going to be dumbstruck with the varieties of food you serve them, so do yourself the honor and add this to your cookery book.
